Description
Tindola nu Shaak (also known as Ivy Gourd Sabzi) is a simple and flavorful Gujarati dry curry made with tindora (ivy gourd), a small green vegetable known for its slightly crunchy texture and mild flavor. The tindora is sliced and sautéed with a traditional tempering of cumin seeds, mustard seeds, turmeric, red chili powder, and other Gujarati spices. A touch of jaggery is sometimes added for a mild sweetness, balancing the spices beautifully.
This light and healthy dish is commonly served with rotli (roti) or as a side with dal and rice. Its crisp texture and homestyle flavor make it a regular feature in everyday Gujarati meals.
